Lemon Garlic Spaghetti with Chicken
4-6 oz of dry Spaghetti (I used a whole wheat spaghetti)
1/3 cup grated parmesan (or more if your a cheese lover)
4 tsp olive oil
3 cloves garlic
1 lemon (juice and zest)
4 tbsp pine nuts
6-8 basil leaves, chiffonaded
2 Chicken Breasts cooked and cubed. ( I used left over chicken from the night before)
First, chop garlic and place garlic in olive oil, let garlic cook in oil over low heat until the garlic starts to brown on edges. Do not over cook the garlic, the garlic will be come bitter if over cooked. Immediately remove from heat and reserve. Boil up the spaghetti.
When the spaghetti is almost done, place pine nuts in the reserved garlic and oil and let nuts toast for 3-5 minutes. Add more oil if necessary. Add the lemon juice of one lemon and the zest of the lemon. If using chicken, place inside pan with the rest of the ingredients. Add cooked pasta to the pan. Stir in cheese, basil and salt and pepper to taste.
I served with a fresh salad and a glass of Pinot Grigio. Not only did Jarod and I enjoy the meal, it was a full on crowd pleaser, Hazel loved it! Hope that you will try the recipe!
