Pork Green Chili

Good Morning All!  Hope that everyone is recovering from the Holiday...I know that I'm slowly recovering from a food coma and total Christmas exhaustion!  This week I have not felt like cooking, at all, but I'm going to share another family recipe that is quick and easy and perfect for those nights you don't feel like doing much!  


Pork Green Chili

~1 pound of diced pork
~2 cloves garlic
~3 fresh roasted green chili's (if you can't find fresh, 3 cans of store bought green chili)
1 15oz of diced tomatoes
1 cup water

Rue
~3 Tablespoon of Olive Oil or butter
~3 Tablespoon of flour

The rue is made in a different pan then the green chili and added to the green chili mixture after.


Sear pork in a skillet until cooked through, 5-10 minutes, add garlic cook an additional 2 minutes.  Add water, green chili's and tomato and let simmer for 20 minutes.  Add Rue.  Lower heat to low and simmer chili for 2 hours.  

This is the perfect recipe served in a bowl with tortillas and cheese.  Add it to the top of hash-browns or eggs in the morning, smoother burritos or enchiladas or serve with tamales.....YUMMO!
